The most delicious cheesecake recipe ever! If you are not generally a cheesecake lover like myself you will want to try this one!
Ingredients:
Lotus Biscoff Spread – 2 tblspn
Lotus Biscoff Biscuits – 1 large pack
Vanilla Essence – 1 tsp
Condense Milk – 215ml
Fresh Cream – 250ml
Gelatine – 10g
Cream Cheese – 1 tub
Lemon Juice – 2 tblspn
Castor Sugar – 1/4 cup
Butter – 100g
Method:
Base
Crush biscuits until fine
Melt butter
Combine together to form a sticky like sand.
Spoon into mould and press down. You can use cupcake moulds if you want cute snack sizes or you can go for a cake tin like mould. Once I filled my moulds, I placed it into the fridge to harden while I made my filling.
Filling
I started by taking out two mixing bowls.
In one bowl, I whipped together the cream cheese and condense milk until smooth.
In another bowl, I add the fresh cream, vanilla essence, lotus spread (tip: place 2 tablespoons of lotus spread in a bowl and heat this in the microwave for a few seconds to soften which will allow for a better mix through the filling) and castor sugar. I whipped this together until smooth.
I then added the two mixtures and whipped it until fully combined.
In a cup, I added the gelatine. Then added the lemon juice and further added 1/4 cup boiling water and stired until gelatine dissolved (tip: if need be you can put in the microwave for a few seconds to assist with it dissolving).
Then I took my gelatine mix and added it to the rest of the filling and whipped it for a few seconds to ensure gelatine is evenly distributed. Bare with me, we almost at the finish line.
I proceeded to take out the mould from the fridge (the base should have already hardened). I then spooned in my filling and plopped them back into fridge for at least 3 hours to set.
After 3 hours was over I decided it was time to decorate as it was fully set:) I decorated by melting some Lotus Biscoff spread and drizzling it over as well as adding some crushed Lotus Biscoff biscuits. And Voila you done!
This recipe is super easy and flop proof! Also if you don’t have the Lotus biscuits then you can use Bakers Nutticrust biscuits, and if you cannot find the Lotus spread just substitute it for some caramel treat.
